Eggplant rolls from Paloma Restaurant, Estrella del Mar

Chef Rafael R. Huidobro, who is the head chef at Paloma Restaurant at Estrella del Mar, is our first guest to this section. We hope you will appreciate it. Chef Rafael gives us his recipe for a delicious appetizer called eggplant rolls.
Eggplant Rolls
Ingredients:
100 grams of eggplant
One egg
120 grams of bread crumbs
100 grams of milk
100 grams of flour
1 gram of salt
1 gram of pepper
Ingredients for the stuffing:
50 grams of Mozzarella cheese
30 grams of Parmesan cheese
30 grams of “panela” cheese
30 grams of canned mushrooms
30 grams of finely cut spinach
20 grams of chopped red bell pepper
Preparation
Chop up the eggplant into slices (a little thicker like ham)
Add salt and pepper
Cover the slices with flour with milk and egg
Cover with bread crumbs and Italian spicing
Fry, dry off the grease and stuff
Cover each roll with marinara sauce
Paloma Restaurant is located in the Clubhouse of Estrella del Mar Tourist Complex. Capacity is 140 with option for special events outside in the garden.
Chef Huidobro has 30 years experience in food service. He graduated from the Culinary Arts School in Houston, Texas and specializes in Italian food, which he studied at the Cordon Institute in Miami. He also had his own restaurant in Houston called Amerigos. For more information, visit
